The Phoenicia Malta will soon host a one-of-a-kind culinary event at its flagship restaurant Contessa, showcasing the rare flavours of freshly foraged white truffles.
The unique dinner will include a special twist: just days before the event, Food and Beverage Manager Matteo Biagini and Executive Chef Daniel Debattista - who are jointly curating the evening - along with The Phoenicia Malta's Brand Ambassador Neville Juan Cardona and Hotel Manager Silvan Camilleri will embark on a truffle-hunting expedition to the lush forests of northern Umbria.
Taking inspiration from Matteo Biagini's Umbrian roots, the event draws on an extraordinary family tradition. Biagini's father, an experienced truffle hunter, will lead the Phoenicia team through the woodlands on his estate, accompanied by two Lagotto Romagnolo dogs, Minni and Lilla. This beloved Italian breed, renowned for its skill in truffle hunting, will help unearth these elusive culinary treasures, which will become the centrepiece of the unforgettable dining experience at The Phoenicia Malta.
On 22 November, guests at Contessa will experience the genuine essence of Italy with a decadent five-course menu, where every dish has been crafted to complement and celebrate the unique aroma and flavour of the white truffles the team will bring back. Highlights of the set menu include delicacies such as poached egg with white truffle, 'Riseria Ferron' Carnaroli risotto al tartufo bianco and a rich beef fillet garnished with truffle and turnip 'garni', all paired with exquisite wines from some of Italy's most esteemed producers, in collaboration with Charles Grech.
