His winning dishes included

perch rolls with fresh citrus beurre blanc as the starter,
grilled venison served with confit potatoes, nutty celeriac ragout, roast duck liver, and jus for the main course, and
a delightful white chocolate mousse with cinnamon-citrus quince casserole for dessert.
